I enjoy planning and sharing fun crafts and recipes around each holiday, but I’ve been so busy that I haven’t had time to even process the thought of said crafts and recipes. I totally dropped the ball on St. Patty’s Day and bought shamrock cookies from the grocery store. Easter is approaching and I managed to come up with a simple way to add a touch of Easter to one of our favorite treats. We’ve been on a cheesecake kick so I was determined to somehow Easterize it without going crazy on the pastels.
When I said simple, I really meant it. See that bunny up there? Russell Stover White Chocolate Bunny plopped on top of a strawberry cheesecake. Just a little something I grabbed in the Easter aisle at Walmart. Oh yea. Call me Martha. This cheesecake is truly a cinch and tastes like it’s been slaved over. The hardest part is waiting for it to chill and set. Poor Jayden thought he’d just die waiting for his slice. Sidenote: we wear seasonal jammies ’til they don’t fit no mo’.
- 1 1/2 cup graham cracker crumbs
- 1 stick of butter, melted
- 1/4 cup sugar
- 4 - 8oz Philadelphia Cream Cheese, softened
- 1 1/2 cups sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 4 eggs
- 1 cup heavy whipping cream
- 2 - 21oz cans Comstock Strawberry Pie Filling
Crush graham crackers using a food processor or place crackers in a plastic bag and crush using a rolling pin.
Mix graham crackers, melted butter, and sugar in a bowl.
Evenly spread graham cracker mixture in the bottom of a 12" springform pan.
Preheat Oven to 350°F.
Using a mixer, soften cream cheese on low speed in a mixing bowl.
Add sugar and beat until creamy. Add more sugar according to your taste preference. Periodically scrape the sides of mixing bowl.
Add eggs one at a time until they are thoroughly mixed.
Add cornstarch, vanilla extract, then heavy whipping cream. Mix until blended.
Pour cream cheese filling on top of the graham cracker crust, using a spoon or spatula to help scoop out the remnants.
Bake cheesecake for 1 hour or until the top is slightly brown.
Remove from oven and let cool.
Pour and smooth strawberry pie filling across the top of cheesecake. Position chocolate bunny on top of filling, pressing down slightly.
Place cheesecake in the refrigerator to set before opening springform pan.
If cream cheese is still chunky, you may want to heat the cream cheese filling on the stove, whipping until smooth and blended.
