Spring: Candy-Stuffed Easter Bunny Cupcakes

Candy-Stuffed Spring Easter Cupcakes

Happy Friday!

Here’s a light read and fun activity you can do with the kiddos over the weekend… because Easter’s on its way!

I only realized after seeing all of the Easter goods on display during a recent grocery run. I’ve been in my own little world oblivious to that thing called a calendar, but I couldn’t let the season go by without sharing these fun cupcakes with you all! Enjoy!

Ingredients

Homemade or boxed vanilla cake mix
The wet cake ingredients according to recipe or box
Gel food coloring
Your favorite Easter candies

Directions

Pre-Heat oven to 350 F and line cupcake pan with cupcake liners.
Vanilla Cupcakes:
Prepare your favorite vanilla cake batter according to recipe or boxed mix.
When the batter is thoroughly mixed, separate into three equal parts.
Add gel food coloring of your choice (a different color for each bowl).
Add cake batter to cupcake pan, leaving some space at the top so that they don’t spill over while baking.
Once the cupcakes are done baking, set aside and let cool.
Cupcake Stuffing:
Using a small knife, carve out a circle in the middle of each cupcake making sure not to cut all the way through to the bottom.
Remove the center piece and cut away excess so you are left with a “lid”.
Fill the cupcake with desired candy.
Replace the top/lid of the cupcake and decorate as desired.
