Homemade Cheese Crackers

With Jayden officially registered for Kindergarten, we are trying to make sure that he is prepared for the transition. Aside from the usual academic and emotional preparation, we are focusing on his diet. What he eats will set the mood each and every day, so we are making sure that his meals and snacks are packed full of nutrients. Healthy students are better students… and strong and alert students can hold their own… if need be. I’m just sayin’. 😉

Studies have shown that students who eat a nutritious breakfast have more energy, improved attendance, higher math and reading scores, increased creativity, increased memory, and a better mood. But it doesn’t stop at breakfast. Kids need nourishment throughout the day too. A great source of  nutrient-rich foods include dairy such as milk, cheese, and yogurt. A cup of milk along side homemade pancakes and fruit is a great way to start the day off right. For lunch, a serving of string cheese or yogurt packed with grilled chicken fingers and cucumbers are a great way to refuel in the middle of the day. For an after-school snack, cheese crackers and kombucha tea.

Cheese gives everyone something to smile about! It packs a protein punch, and it provides essential nutrients, including, calcium, vitamins A and B12, riboflavin, phosphorus, potassium and magnesium, which help you maintain your muscles and build strong bones and teeth. ~ Midwest Dairy

Cheese crackers are a snack that Jayden enjoys. I love making them at home because I can add health boosters such as whole wheat, hemp, and chia seed. I also have the freedom to cut them into fun little shapes like sharks. Jayden loves biting off the heads and making them swim in the air! The dough is made in the food processor, but can be also be made using a simple mixing bowl and fork.

Homemade Cheese Crackers
 
Ingredients:
  • 1 stick butter, cut into pats
  • 1 cup whole wheat flour
  • ⅓ cup sharp cheddar cheese
  • ⅓ cup mozarella cheese
  • 1 tbsp hemp seed
  • 1 tbsp chia seed
  • 1 tsp mixed herbs (I use Bragg's Organic Sprinkle)
  • 3 tbsp cold water
Directions:
  1. Place butter in food processor and give it a run until creamy.
  2. Gradually add flour, cheese, water, and dry ingredients, giving the processor a run after each addition until dough is cohesive.
  3. Roll dough into a ball and refrigerate for 15 minutes.
  4. On a floured surface, roll dough out to ⅛ inch in thickness.
  5. Cut dough into shapes and place on a non-stick cookie sheet.
  6. Bake at 400 degrees F for 15 minutes or until golden brown and flaky/crisp.

Wow, these look amazing! I've only made crackers once, many years ago and they were bland and flat. I'm going to try these; I'm sure my boys would devour them.

Try doubling up on the cheddar, they'll be more flavorful ;-).
