Stuffed Chipotle Roasted Hens: Delicious Party Food

After Thanksgiving, who’s ready to cook up another feast for Christmas? …I’ll wait. Christmas is all about relaxing, although many of us are certified pros at doing the total opposite. Ehehm. For Christmas, we like to keep things simpler and lighter by having chicken instead of a huge turkey. Preparing smaller birds are a great way to still have delicious party food with less involvement and worry about a ton of leftovers.

I love being able to quickly season up a few hens and toss them in the oven. My secret ingredient? Pepper sauce. I never ever roast chicken without broiling it in one of my favorite sauces. Today, I’m teaming up with Tabasco to share how I jazz up roasted hens with their sauce. Using Tabasco as a seasoning adds a ton of flavor without a lot of heat.  All I do is lightly sprinkle a little salt, garlic powder, and herbs on the hens and let them fully cook. I finish them off by brushing on Tabasco sauce and broiling for a few minutes. This makes for the most delicious and crispy skin I’ve ever tasted.

At Walmart, I picked up Tabasco’s Original Red, Green Jalapeño, and Chipotle sauces to add to my spice cabinet. These little sauces can be found in the condiment aisle, near the BBQ sauce and ketchup.

I usually use Tabasco Original Red on my roasted chicken, but to accommodate my latest obsession with the smoked flavor of Chipotle, I wanted to try their new Chipotle sauce first. The results? Amazing! I hope you enjoy the roasted chicken recipe below. It’s really great with southern style dressing, so I’m including that recipe as well.

Chipotle Roasted Hens

Ingredients:
  • 2 Cornish game hens, thawed
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 2 tsb Tabasco Chipotle Sauce
Directions:
  1. Pre-heat oven to 400 degrees F. Lightly oil a baking sheet or dish.
  2. Place hens on baking sheet/dish and stuff them with dressing. Season the hens with the spices. Let them bake for 30 minutes before brushing on the Tabasco Chipotle sauce. Place the hens back in the oven to broil for five minutes.

Southern Style Dressing

Ingredients:
  • 1 homemade loaf of cornbread or (16 oz) package dry corn bread mix
  • 1 cup bacon pieces
  • ½ cup chopped celery
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 2 eggs, beaten
  • 2 cups chicken stock
  • 1 tbs ground sage
  • 2 tbs poultry seasoning
  • Salt and pepper to taste
Directions:
  1. Prepare cornbread. Let it cool and crumble it up.
  2. Preheat oven to 350 degrees F. Lightly oil a 9x13 inch baking dish.
  3. In a large skillet over medium heat, fry up the bacon, then add the celery, green pepper, and onion. Saute until soft.
  4. In a large bowl, combine the vegetable mixture with 3 cups of the crumbled corn bread, eggs, chicken stock, and dry seasonings. Mix well.
  5. Place dressing mixture into the prepared dish and bake at 350 degrees F for 30 minutes.
Notes
You can add more cornbread or some breadcrumbs if the consistency of the dressing is too runny.
