3 Easy Chicken Dinners To Cook While Vacation

When you’re away on vacation, you may be tempted to eat out a lot of the time, but doing so can be hard on the wallet. However, preparing home cooked meals can also be just as satisfying.

It doesn’t matter whether you’re camping, renting an RV with Outdoorsy, or staying in a villa, you can cook satisfying chicken-filled meals for you, and your fellow travelers that won’t make you feel like you’re missing out.

Below you will find 3 of the best chicken dinners to cook on vacation, helping to make your time away a little more enjoyable:

Chicken And Tomato Pasta Bake

Chicken and tomato pasta bake is a great hearty dish to cook as it’s full of carbs and protein, and it just tastes good!

Add 8 ounces of pasta, 2 cups of chopped chicken breast, 3 cloves of chopped garlic, and ½ a pound cherry tomatoes, halved to a medium sized casserole dish, and mix well. Add approximately 2 cups of mozzarella cheese, ½ a cup of Parmesan cheese, and some salt and pepper to taste. Mix well, and pour 2 cups of milk over the top.

Cover the dish, and cook for about 50 minutes at 350 Fahrenheit, or until the pasta is tender. For an added layer of luxury, sprinkle some breadcrumbs and herbs on the top, and serve.

You can also add herbs, meatballs, or a variety of vegetables to the pasta bake if you wish.

BBQ Chicken Burrito

Add 8 ounces of crushed tomatoes, 1 cup of chicken broth, some garlic, and a few herbs and spices to a blender. If you don’t have a blender, chop and mash the tomatoes and garlic so they’re as smooth as you wish.

Heat some vegetable oil in a skillet, add 1 cup of rice, and cook for 3-4 minutes. Add the tomato mixture and boil. Season 4-6 chicken breasts with salt and pepper and add the chicken to the skillet.

Stir the tomato sauce so it covers the rice, and cook the chicken on a low heat until thoroughly cooked. This should take about 20 minutes. Once the chicken is done, remove it from the skillet, and set aside.

Now add some black eye peas and sweetcorn to the skillet, and stir well. Add some more chicken stock, and finish steaming the rice if you wish to.

As the rice is steaming, add some BBQ sauce to a bowl, and pour the chicken in there. Stir well to coat the chicken, divide the chicken between some plates, add the rice and sauce, and serve on your favorite tortillas.

Open Grilled Chicken And Pepper Sandwiches

This recipe is great for leftover rotisserie chicken. Add some cooked chicken, a splash of lemon juice, and some black pepper to a skillet, and marinate for 10 minutes. Broil chicken along with some chopped green peppers until it’s done to your satisfaction. Also, broil some slices of bread until toasted to your liking.

Take some lettuce leaves, and brush them with juices from the bottom of the skillet, and set to one side.  Now divide the chicken, peppers, and lettuce between the slices of toast, sprinkle a little shredded cheese on top and serve.
