It’s smoothie season! Well, actually any season is smoothie season, really. Around the new year smoothies become increasingly popular since we’re all settling from the holiday, looking to set goals towards healthier lifestyles. For me personally, I think 2015 my worst year in terms of nutrition. My diet wasn’t as balanced as I would have liked it to be. I spent most of the year pregnant, so while it was a time when I should have been conscious of getting those extra greens, I was just happy to be able to eat on time before the extreme nausea kicked in.

I feel so much better when I eat my fruits and veggies and smoothies are a great way to enjoy them especially being super busy and easily sidetracked. I personally haven’t had a smoothie that I haven’t liked. There’s something invigorating about a fresh, delicious smoothie. A feeling that I need more of in my life. So this year, I’ve made a goal to drink more smoothies. I’m going to try to stay consistent with preparing smoothie portions and freezing them ahead of time. That way, I won’t have to keep purchasing produce every week. And let’s face it, I’m not leaving this house unless I absolutely have to. Winter is when I hibernate.

I don’t even have to turn to sift through Pinterest for smoothie ideas. Walmart has an index of over 40 simple smoothie recipes that I’ll be using as my guide. I started the year with this Kiwi Avocado Smoothie. I could honestly drink this smoothie all day long. I love the richness of avocados and coconut milk. That richness makes me feel like I’m drinking a dessert. This smoothie is great any time of the day; breakfast, lunch, dinner, or snack time. Give it a try! Cheers!

Kiwi Avocado Smoothie

Ingredients:
  • 3 Mighties kiwis, peeled and roughly chopped
  • 1 ripe avocado, peeled, pitted and chopped
  • ½ cup packed fresh spinach
  • 1 cup coconut milk
  • 2 cups peach juice
  • 2 tablespoons honey
  • 1 teaspoon grated fresh ginger
  • 5 ice cubes
Directions:
  1. Add avocado, spinach, coconut milk, peach juice, honey, ginger and ice to a blender. Purée until smooth.
  2. Add Mighties kiwi and pulse just until blended. Divide amongst 4 glasses.
  3. Garnish glasses with kiwi slices if desired.

How To Freeze Avocado

Wash the avocado with the skin still on. Cut the fruit in half and peel. If opting to keep them as halves, put them in a freezer bag to freeze. If pureeing, give them a whirl in a food processor with a little bit of lime or lemon. Store in freezer bag and freeze up to five months.
